It is helpful to reduce the dough viscosity and increase the elasticity so it’ll get puffed up during baking. Furthermore, there are no significant health issues associated with the utilization of cysteine. Cysteine is not considered to be a vegetarian source, hence, not appropriate to be consumed by vegans.
